In Arabic, the word tajine is used to describe the meal as well as the container in which it is prepared. The term tajine is also used to describe both the decorative serving tajine as well as the cookable version. North Africans use cookable tajines to prepare a wide variety of savory dishes that involve slow cooking, an art that dates back centuries. In the earliest days, tajine dishes were prepared , and then slow cooked over charcoal. Tajine recipes have developed over time to include many exciting culinary delights.
Our cookable tajine is intended for use as a slow cooker on the stovetop at low temperatures, or in the oven at any temperature. It is a perfect vessel for oven baking as cooking in clay aids greatly in retaining and enhancing the taste and nutritional value of cooked foods. Additionally, you can avoid the health risk associated with cooking in aluminum by cooking and baking in our clay tajine. It is quite simple to use our cookable tajine: Please soak the tajine base in water overnight (or for at least four hours) to cure before the first use only and then let air-dry for a least 24 hours. If more than a few months pass between uses, we recommend curing the tajine base again. When cooking, we suggest using olive oil or butter to help prevent food from sticking inside. Once the tajine is hot, do not shock it with water; rather let it air cool before washing. We recommend hand washing only, using course salt instead of detergent.
